Wicker basket with glass of chive pesto
On the way up to my farm stall with freshly made glasses of Wild Garlic Pesto, I had to immortalize the basket in the middle of newly sprouted Anemones and the fine yellow Wartroot

Ramsløg, also known as wild garlic or bear's garlic, is an aromatic and tasty plant that grows wild in forests and forest edges in Europe and parts of Asia. It has been part of the human diet for centuries, and its characteristic garlicky flavor and oniony aroma make it a popular ingredient in the kitchen.

Wild Garlic Pesto with lots of good vitamins

This versatile plant is rich in various vitamins and nutrients, making it both tasty and healthy. Wild Garlic contains, among other things:

  • Vitamin C : A powerful antioxidant that strengthens the immune system and promotes healthy skin and tissue. Chives contain lots of vitamin C, in fact 20-40 times as much as in lemons.

  • Vitamin A : Important for eyesight and healthy skin as well as for maintaining a healthy functioning immune system.

  • Vitamin K : Essential for blood clotting and bone health.

  • Folate (B9) : Important for cell renewal and reproduction of DNA, especially important during pregnancy.

  • Iron : Necessary to maintain healthy blood and supply the body's cells with oxygen.

In addition, there are all the other good ingredients included in rams' onion pesto. Today I made my á la crème Wild Garlic Pesto from Wild Garlic leaves picked in the garden here at Trelde Næs:

  • Baked almonds

  • Wild Garlic leafs

  • Cashew nuts

  • Almond oil

  • Organic extra virgin olive oil

  • Omami Grate cheese from Them

  • Himalayan flake salt and a little pepper.

It was super good, yummy!

Wild Garlic is a perennial plant with long, slender leaves and white flowers that bloom in spring. It is part of the onion family and shares many traits with onions and garlic. The plant can be identified by its characteristic smell of garlic, especially when the leaves are crushed or torn. The edible parts of chives are primarily the leaves, although some people also use the white bulbs and flowers in cooking.

One of the most popular ways to enjoy chives is to make pesto. By mixing chives with nuts, cheese, olive oil and a little salt and pepper, you can create a delicious and aromatic pesto that can be used as a dip, spread or as a sauce for pasta or vegetables.

So if you're looking for a way to bring a taste of spring into your kitchen, try making your own Wild Garlic Pesto and experience the unique flavor and health benefits of this wonderful plant.
