
Spring calls for homemade Wild Garlic Pesto & Wild Garlic Salt
Every spring the smell of garlic here, when carpets of Wild Garlic bloom both in the garden and in the woods on Trelde Næs. With the wicker basket in hand, I set out on a harvest trip, and soon the basket is filled with the beautiful green leaves. For me, it's not only about cooking, but also about celebrating nature and its gifts. Picking Wild Garlic and turning them into delicious delicacies is a way of connecting me with the change of season and my surrounding nature. And when I sit at the dinner table and enjoy homemade Wild Garlic Pesto & Wild Garlic Salt, I feel grateful for the earth we share and for the simple joys that nature brings us.
Wild Garlic Salt
My Wild Garlic Salt this year is made from Atlantic Salt and Wild Garlic - nothing else. It is chopped and blended and baked in the oven for 2 hours at 40 degrees before I pour the Wild Garlic Salt on patent glass and can be bought in my creative stall on Trelde Næsvej.
But it's not enough just with Wild Garlic Salt, Wild Garlic Pesto is really a delicacy, so I've also made a few glasses of it and it's now ready in the roadside stall.
Wild Garlic Pesto
I blend the fresh Wild Garlic leaves with cooled oven-baked almonds, Parmesan cheese, taste-neutral rapeseed oil, a little freshly squeezed lemon juice and season with salt and pepper. The oven-baked almonds give an intense and aromatic pesto that can be used in countless ways in the kitchen. I love spreading it on bread, stirring it into pasta or using it as a marinade for grilled meat or vegetables. Each bite is a tasty reminder of the beauty of spring and the richness of nature.
